UltraEgg® vs. frozen whole eggs:
Frozen eggs take 2-3 days to defrost. If enough product isn't
thawed, demand cannot be met. If too much product is defrosted, the
unused eggs will quickly spoil. Regulatory agencies appluad this
product because there is no thawing period which promotes bacterial growth.
UltraEgg® can be stored in the warehouse or under the bench
and is always available for immediate use. UltraEgg® will
produce a much more consistent product, as it is maintained at a consistent
solids content and can be introduced to the batter at the same temperature.
Typically, you'll see at least 5% more volume using UltraEgg®,
and some of our customers have even been able to reduce their egg usage.
UltraEgg® vs. dried whole eggs:
During the drying process, some of the protein in eggs is destroyed
or damaged, creating a loss of functionality. No functionality
is lost using UltraEgg®. Typically, you'll see at least
15% more volume while using UltraEgg®, with a far superior
grain and texture in cakes and cookies. Additionally, there is no
loss of time reconstituting powdered eggs or labor spent on messy cleanup,
and you still have the advantage of room temperature storage.
UltraEgg® vs. liquid whole eggs:
You can expect a shelf life 25 times longer than liquid whole
eggs, and even twice as long as "Extended Shelf Life Eggs." There
is no unproductive time or labor spent moving eggs in and out of the cooler.
With UltraEgg®, the cooler can be used for other needs.
UltraEgg® is safe to use all day at room temperature.
In all other liquid whole egg products, harmful bacteria growth begins
once the product is removed from the cooler.
